Lentil Soup

  • ½ kilo of lentil 
  • 1 large onion
  • 2 cloves of garlic
  • 2 dry laurel leaves
  • 1 cup of tomato juice
  • 1 cup of extra virgin olive oil
  • 2 carrots sliced 
  • salt and pepper to taste 
  • celery chopped
  • feta cheese or goat cheese optional

  1. Wash the lentil and add to boiling water
  2. Drain the lentil, set aside
  3. Boil water in a saucepan, add the lentil, all the ingredients, except the Extra Virgin Olive Oil, cover, and simmer for 30 min. 
  4. Add the extra virgin olive oil, pepper and vinegar before serving, this enhances the flavour. Also, it is optional to add feta cheese crumbled or goat cheese to top the dish.
