Sardines in lemon-oregano

  • 1 kg sardines/any small fish
  • 2 cups of olive oil 
  • 1 large onion sliced 
  • 2 cloves of garlic crushed 
  • oregano 
  • juice of 2 lemons 
  • salt and pepper
  • chopped parsley

  1. Clean fish, if desired, remove center bone. Place in baking pan. 
  2. Separately mix the Extra Virgin Olive Oil with lemon juice, adding all the ingredients. 
  3. Pour over fish and cook in oven 170°C for 20 minutes adding some water if necessary.
