Baked fish in wax paper

  • ny large fresh fish like sea bass or sea bream (1½  - 2 kg)
  • 1 cup of extra virgin olive oil
  • 1 tbs oregano (fresh or dried)
  • 1 branch of rosemary 
  • juice of 2 lemons
  • 2 cloves of garlic (optional)
  • salt and pepper

  1. Wash and season the fish, sprinkle with oregano, rosemary and olive oil.
  2. Place the garlic cloves in the fish (optional) wrap in wax paper. 
  3. Cook uncovered for 35 min in 180°C oven.
  4. Prepare "ladolemono" by combining the extra virgin olive oil and lemon juice in a serving bowl, sprinkle with oregano and beat together until mixture is thick.
  5. Remove fish from oven and from wax paper, serve on a platter and pour "ladolemono" mixture over the fish.
For a more delicate taste we used PHILIPPOS DELICATE Extra Virgin Olive Oil .
